SHRIMP IN A MULTI-PURPOSE SAUCE/DIP

Makes two cups of a fantastic sauce/dip.

I must tell you; I love this sauce. It is simple and easy to prepare, yet the flavor is great for seafood, crudites and just about anything else you might think of.

I particularly like it served over a plain boiled shrimp and used as an appetizer course or a happy hour goodie. It's also fabulous as a buffet table item.

INGREDIENTS

PREPARATION

  1. Place scallions or onion, green or red pepper and horseradish in a fine meshed strainer and let drain for 15 minutes.


    • To speed things up a bit you may alternately place the onion, pepper and horseradish in the center of a smooth-surfaced tea-towel and twist to drain.


  2. Combine mayonnaise and chili sauce in a bowl.
    • Add red pepper flakes, black pepper, salt and garlic.


  3. Whisk well to combine.
    • Add drained ingredients and whisk or mix well.


  4. Taste for salt, cover tightly and refrigerate.

NOTES:

  • May be prepared at least 1 to 2 days ahead.
  • Makes enough sauce to garnish at least 2 pounds of peeled and boiled shrimp.
